Firefighterforhalloween

Don't you love when you write an entire post and when you go to hit publish, it goes blank?? GRRRR

For months Carson has insisted that he be a firefighter. When you ask him what he wanted to be his reponse was "firefighterforhalloween" all one word. I didn't realize that he seriously thinks this is all one word until the other day when he was talking he said it as all one word. it's the cutest thing in the world! when you ask him today what he was for halloween he says "firefighterforhalloween" love it!

My mom came over early to give Carson some halloween presents. My dad had to work...bummer! Carson was very disappointed papa wasn't there :( My mom was wearing the cutest headband that actually looked like part of her hair. This is what Carson would look like if he was a girl! :)


Then we met Nikki, Sam and Bella...Bella was a hot dog and she was not loving it! she sure was cute though!
Carson walked the entire hour and a half to all the houses to trick or treat. He would walk right up and stick out his little arm with the pumpkin hanging on it and wait for his candy. No shyness in that boy! I've mentioned before that he could live outside if i let him...he was so happy to be outside, walking and running around for that long. However, FINALLY after almost two hours, he wanted my mom to hold him. Luckily, we were at the end of our route. I'm pretty sure that he got two full pumpkins full of candy because he was the cutest firefighter on the block! He was so adament this year abuot what he wanted to be...i can't wait to see what he is going to be next year!

Baked Pumpkin Pie Oatmeal


I've been looking for good and healthy (and tasty!)breakfasts for carson and i for a while as i've been in a rut latley with fruit oatmeal, eggs, toast, cereal... . Found this one on Iowa Girl Eats. Can anyone tell me how to link a website here?

Anyway...i love pumpkin anything and i thought this may be bland but with all the little additions of the spices, it was really good and good for you. Carson gave it the ok too :) This is for two servings so you can double and make more. If you make the night ahead, just put it inthe fridge til ready and then pop in the microwave for 45 seconds or so..

1/2 cup oats
3/4 cup milk
1/4 cup pumpkin puree
2 teaspoons brown sugar
splash of vanilla extract
dashes of pumpkin pie spice, nutmeg & cinnamon
Topping mix:
~2 Tablespoons sliced almonds
~1 teaspoon brown sugar
~1/2 teaspoon butter

Bake for 10 minutes at 375, remove from oven and top with almond mixture. Bake for 10 more minutes and you are all set :) enjoy!

Easy Halloween Decorations

This was so easy and i thought turned out really cute! I made this last year and all i did was go to Michael's with 50% off coupon in hand and bought one of the black wreaths. I then bought the Halloween garland with pumpkins on it, wrapped it around the wreath and then added the Eek ornament that had a cute little bat on it. I hung it on Carson's bedroom door this year :) easy and cheap!

Coffee Cake


I got this recipe from my local newspaper. It calls for any fruit and i just so happened to have blackberries from my mom's garden that i had frozen so that's what i used. I will make this again and again! and side note...don't do what i did and read the instructions wrong.i added 1 tablespoon of almond flavoring and 1 1/2 tablespoon of salt in my first batch. can you imagine what that tasted like?? blah!!! that first cake went right in the trash :)


1/2 cup butter, softened

8 oz cream cheese

1 tsp almond flavoring

2 cups sugar

4 eggs

1 1/2 cup flour

1 1/2 tsp baking powder

1 tsp salt

1 3/4 cup fruit (blackerries, bluberries etc..)tossed in 1 tblsp flour and 2 tbslp sugar


Lemon glaze:

2 cups powdered sugar

2 tbsp lemon juice

2 tbsp heavy cream

1 tbso softened butter


Preheat oven to 350. Combine butter, cream cheese, almond paste and sugar and beat until fluffy.

Add eggs, flour, baking powder, and salt then fold in your fruit. Bake in well greased bundt pan for 35-45 minutes.

While it cools, combine ingredients for glaze and stir until smooth. Drizzle over your cake.

Taco Soup

(sorry for the horrible pic...soup doesn't photo well)
I got this recipe from my mom a while ago. It's full of protein and fiber and is really really good and can't get any easier than this. It is perfect for this chilly fall weather and so good!


1 lb hamburger

1 chopped onion

1 small can chili beans

1 can kidney beans

1 can great northern beans

1 can corn

1 can diced petite tomatoes

1 pkg taco seasoning

1 pkg hidden valley ranch.


Brown hamburger and onion, add rest of ingredients (i didn't drain any juice from the beans) and heat til through.

Carson Funnies

couple things i want to document that has made us fall over in laughter. The little man is just to funny these days...

Carson knows four nursery rhymes by heart: Jack and Jill (his fave and happens to be what this little story is about) Baah Baah Black Sheep, Little Miss Muffet and Hey Diddle Diddle.

His little cousin Addi fell the other day and i was telling Carson about it.
This is our conversation:
Me: Carson...Addi got hurt and had to go to the hospital to see the doctor like you did. She fell down...
Carson: and broke her crown??
Hilarious!

There is a country song out by Zac Brown. Carson loves country music and we watch videos on tv sometimes and this happens to be a frequent one. The lyrics go "I got my toes in the water, ass in the sand...."
This morning i start singing it...(of course, i don't say "ass" and i stop there and i've never sang this song out loud before...ever)
Me: I got my toes in the water...
Carson: Ass in the sand...

I about fell over laughing.

Loving Fall

Today officially felt like fall to me. I know it was officially fall, two weeks ago?? But with the warm weather we are having during the day, i couldn't get myself to get any of my fall decor out. However, today was in the high 60's here...so, now i can start to get excited about my favorite time of the year! i absolutely looooove fall...and thought i'd share some of the reasons why!

Hamburger Stroganoff with cream of chicken


Wonderful. Excellent...Carson and daddy loved it! So easy and fast to make...i'll definately make this again! I found this on recipeezaar...



1/2 pound hamburger meat

1/2 cup chopped onion

1/4 cup butter

2 tbls flour

1 tsp salt

1/8 tsp pepper

1 (4ozcan)sliced mushrooms

1 (10oz) can cream of chicken soup

1 cup sour cream

sprinkling parsley flakes

2 cups egg noodles

1) Bring water to boil for noodles and begin browning beef and onion, drain

2) Add butter, flour, salt, pepper, blend til smooth an add soup. Add mushrooms and simmer 5-10 min. Cook noodles during this time, drain. Just before serving stir in sour cream and parsley flakes to meat mixture. Stir in pasta and serve.

3) I served with rolls and broccoli

Rambo!

Never a dull moment! Sometimes weekend plans just don't turn out the way you hoped :) We were supposed to go ona 4 wheeling trip with friends last weekend but at the last minute, i found out that my parents could not watch Carson for us so we opted not to go. It wouldn't of worked out anyway because that same night, as i tell carson to give daddy a kiss goodnight and on our way to bed...i'm inthe kitchen andi hear a blood curdling scream! daniel comes running in thekitchen with carson in his arms and blood pouring, literally pouring out of his eye. it made me sick to my stomach...i was scared to look. I had a huge sigh of relief when i saw it was just a cut under his eye...but it was so close to his eye, i haved thanked the lord many times for it being under his eye. We got the bleeding to stop and waited about a half hour before we left for the hospital but i tell you...this little man is a trooper!!! He wanted to keep playing while i chased him around the living room wiping his face from the cut still bleeding! And once we got to the ER, he was such a big boy. They only had to glue it which was a huge relief. Cardinal Glennon is the best!!! Carson had many visitors through the weekend and got "get well" gifts too! haha spoiled much?? :)

I have to remind myself that these things will happen. I beat myself up about it because it could of been prevented...he walked into the living room to kiss daddy and tripped on....my yoga mat. ugh. and then hit his face on the juice cup he was carrying. double ugh. i was sick about it...but accidents happen and i've learned that you can't be to careful...even with a rolled up yoga mat.

Here is the damage...our little rambo :) the cutest is when you ask him to do "strong boy" with muscles showing and this hat on :) so cute.

Puppy Chow


We went to a bbq over the weekend and i made this. An oldie but goodie. This stuff is addicting...can't keep your hands out of the bowl...addicting :)


1/2 cup butter

1 cup peanut butter

2 cups milk chocolate chips

1 (17.5) ounce rice cereal

1 pound (give or take?) powdered sugar


Melt peanut butter and milk chocolate chips. Pour over cereal and toss til well coated. Place cereal in a paper sack-add powdered sugar and shake til all coated. Tip...store in freezer. SO GOOD!

Feel Good!

I read this today and it struck a cord with me. It's something i need to have in my pocket at all times so that when my attitude even slightly waivers, this is what i turn to. I think we all need this and should remember this. It's such a good inpirational message! Have a great weekend! Blackberry Cobbler


My mom gave me blackberries from her blackberry bush and i knew exactly what i wanted to do with them. Blackberry.Cobbler. yum!!


1 stick butter

1 cup flour

1 cup milk

1 cup sugar

2 tsp baking powder

2-3 cup of fruit


Heat over to 350. Melt butter in 9X13 pan. Mix together flour, milk, sugar, baking powder. Pour over the melted butter in pan. Place fruit over mixture and sprinkle 1 cup of sugar over top (i omitted this...i sprinkled justa little) Bake for 30-35 minutes

Fall is in the air








I was at Target yesterday and these two boots caught my eye! They are actually really comfortable too. Target has some really cute shoes out right now! I love heels but my feet sure don't! We just don't get along...as much as i wish we did! But they have a paid called Vonnie pumps in Caramel and i absolutely love them. I have wide feet and these are so comfortable! They are all under $40 each as well! I can see these with skinny jeans, skirts and tight with a belt. I'm sad summer is coming to and end but Fall is my favorite season!! This Ann Taylor sweater looks like the most comfortable thing in the world!

Vacation!!


Carson and i had a blast! He was a little scared of the ocean at first but he warmed up to it! When he was one...he had no problem what so ever with the ocean but now he's older, he is more aware and can be scared of things...they are fearless when they are that young. It was so much more fun this year because he was able to run around the pool and in the sand. i can't wait to go again next year. This is Carson and Sam, my sisters fiance. They were best buds by the end of the trip!! I love this pic! This is my dad, aka...Papa! Carson absolutely loves him!!!! My dad is the best!





This was by far...hands down...without a doubt his favorite thing to do! Play with the water hose! People would walk up from the beach and he would be the one to rinse off their sandy legs. He also loved squirting his cousin addi. It was hilarious!

This and That...

My poor little blog...it's been so ignored lately! We have been so busy around here! Carson's birthday, my birthday, my 15 year reunion, our town homecoming and now Carson and i are getting ready to head out to Panama City Beach, FL for a week of beach time with our family! Coconut Cream Pie


Tell me how good this looks! I loooove coconut and i was looking for something cool for tonight's dessert. i must be craving sweets b/c it seem that's all i'm posting about these days! :)

I found this at allrecipes.com and the original recipe calls for vanilla pudding but i subsituted Coconut pudding instead and i'm so glad i did!! i was looking for something easy and this is it! it got rave reviews online too!


Coconut Cream Pie

1 9 inch pie shell, baked

2 3.5 oz coconut pudding mix

1 and 1/2 cup milk

1 and 1/2 cup flaked coconut

1 8 oz .container frozen whipped topping, thawed


1. In a large bowl, combine the pudding mix and milk until pudding mixture thickens. Fold 1 cup of coconut and half of the non-dairy whipped topping into the pudding. Pour the combination into the prepared pie crust.

2. Spread the remainder of the non-dairy whipped topping on top of the pie and sprinkle with the remainder of the coconut. Refrigerate and serve chilled.

My Favorite Cake in the world!!!

I made Daniel a cake for Father's Day. We love this cake around here! It's so moist and melts in your mouth...not to mention the frosting is delicious! Definately definately definately make this! i got this here http://thepioneerwoman.com/cooking/2007/06/the_best_chocol/ suprised? :)

Pioneer Woman Chocolate Sheet Cake
Combine in a mixing bowl:2 cups flour2 cups sugar1/4 teaspoon salt
In a saucepan, melt: 2 sticks butterAdd 4 heaping tablespoons cocoa. Stir together. Add 1 cup boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir lightly to cool.

In measuring cup, pour 1/2 cup buttermilk.Add:2 beaten eggs1 teaspoon baking soda1 teaspoon vanillaStir buttermilk mixture into butter/chocolate mixture. Pour into sheet cake pan and bake at 350-degrees for 20 minutes.

While cake is baking, make icing:Chop 1/2 cup pecans finely.Melt 1 3/4 sticks butter in a saucepan.Add 4 heaping tablespoons cocoa, stir to combine, then turn off heat. Add:6 tablespoons milk1 teaspoon vanilla1 lb minus 1/2 cup powdered sugarStir together.Add pecans, stir together, and pour over warm cake.

Cut into squares or because it's so good...just eat straight from the pan! :) Seriously, this is my favorite cake ever and i'm not sure anything can top this! well..i like carrot cake and german chocolate too :)
